Funfetti Waffles {Gluten + Dairy Free}

These funfetti waffles (gluten + dairy free) are sweet, fluffy, and absolutely sinful. They’re sure to become a breakfast favorite!
I’ve said it before, and I’ll say it again: Sprinkles make everything better!
Sweet, fluffy, crispy waffles loaded with colorful sprinkles–you need to jump on this wagon! I’m not kidding, folks, these waffles are wicked tasty. They’re also gluten- and dairy-free (eggs are not a dairy product).
You want to hear a sad fact: I don’t make and eat waffles as often as I would like. I lead a waffle-less life, and it’s all Squirrel’s fault. The man prefers a platter of meat topped with two eggs for breakfast on the weekend. While I’m frying up his bacon, I’m dreaming about a stack of waffles dripping with maple syrup.
I finally put my waffle needs first and made myself a stack of sprinkle-studded waffles that taste a lot like cake.
What makes these waffles so fluffy is the addition of whipped egg whites. Yes, it’s an extra step, but it’s well worth the extra 2 minutes–promise!
The batter comes together easily without any fancy equipment–a mixing bowl, whisk, and rubber spatula are all you’ll need. The only special piece of equipment you’ll need for this recipe is a waffle iron. You don’t have to get all fancy and invest in the mac daddy of waffle irons. My $27 waffle iron makes a wicked good waffle.
These waffles are every kid’s–and adult’s–dream come true.
Funfetti Waffles {Gluten + Dairy Free}
Sweet, fluffy, crispy waffles loaded with colorful sprinkles.
Ingredients:
- 1 and 1/2 cups gluten-free pancake mix (I use Pamela’s)
- 1 tablespoon granulated sugar
- 1/4 cup rainbow sprinkles
- 2 eggs, separated
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- 1 tablespoon canola oil
- 3/4 cup almond milk
- maple syrup for topping
Directions:
- Preheat waffle iron.
- In a medium-sized bowl, whip egg whites until stiff.
- In a separate bowl, whisk together gluten-free pancake mix, sugar, and sprinkles.
- Add egg yolks, vanilla and almond xtract, canola oil, and almond milk to the bowl. Whisk until smooth. Gently fold in the egg whites.
- Spray your waffle iron with non-stick baking spray. Ladle 1/3 cup of the batter into the center of the waffle iron. Bake until golden brown, about 2 minutes.
- Serve with maple syrup

Ok, I am not going to lie. I am a meat, potatoes, and eggs breakfast person too. I know, don’t hate me. I just always forget they are on the menu, plus I am lazy and don’t want to do the whole mixing and measuring thing. But, giiiiirl I do love me some funfetti anything!!!!
