This Pineapple Cranberry Mojito has been well earned this week. If you’ve been bogged down by stress, I highly recommend shaking up a mojito or two… Heck, just make it two!
I have been diligently working on technical website issues behind the scenes all week. The work is tedious, boring, and downright dreadful. I’d rather be doing anything else, but when Google flags your site, you fix the issues as soon as possible.
And, if you don’t fix the issues, Google will deem you unworthy, and when Google deems you unworthy, it must be true, because apparently Google is king.
I have a newfound respect for anyone that deals with coding, website optimization, and any other task that requires a person to stare at their computer screen all day, every day. My eyes ache by hour 4 and there are 8 working hours in a day. Of course, that 8 hours has been extended into the wee hours of the night this week in order to cross back over to Google’s good side. I want back over on the cool kids side of the table.
I’ll do what ever it takes to get there, too. Even if it means listening to Justin Bieber (is he still raging popular?), ordering a unicorn frappuccino from Starbucks, or switching over to a paleo diet.
By the time I put my computer down for the night, I’m thirsty as hell and about to keel over due to lack of nutrition. Time to eat? Bah, that’s funny. I’ve been living off of Buddha Bowl Foods Classic Cheddah Popcorn all week. The dog has been loving this new routine since he gets whatever pieces don’t make it in my mouth, which, I never realized until now, is almost half the bag. Apparently, I’m a messy popcorn muncher.
The only thing keeping me sane is the daily happy hour session I’ve been partaking in since this whole thing started. This Pineapple Cranberry Mojito… Um, how do I put it? It’s hell-a tasty! But, it’s also dangerous, because the damn thing tastes like you’re sipping on fruit punch, only much more refined for our now sophisticated adult palates. Sophisticated–I just snorted.
The secret ingredient, otherwise known as the ingredient that puts this cocktail on the map (what map, I’m not really sure. My map? Soon to be your map?), is black cherry rum. I discovered black cherry rum last year, maybe, and have been obsessed ever since.
Black cherry rum was used to make this Black Cherry Mojito, which is not only a stunner but refreshing in every way possible.
Pineapple Cranberry Mojito
Ingredients
- 8 mint leaves, plus 1 mint sprig for garnish
- 1 ounce fresh lime juice
- 2 ounces black cherry rum
- 2 ounces pineapple juice
- 2 ounces cranberry juice
- 1-2 ounces chilled club soda
Instructions
- Add mint leaves, rum, and lime juice to a cocktail shaker; muddle to combine. Add pineapple juice, cranberry juice, and a handful of ice to the shaker. Shake well.
- Strain the mixture into an ice-filled highball glass. Stir in club soda. Garnish with a sprig of mint, lime wedge, and slice of pineapple. Serve immediately.
