This Blood Orange Coconut Mai Tai is a sweet and refreshing tropical infusion of blood orange juice, pineapple juice, and a combination of coconut, pineapple, and dark rum.
Sometimes life calls for a cocktail…make that an entire pitcher of cocktails!
Like when you have 50 loads of laundry littering the floor of your basement that you now have to wash and fold in one day because you suddenly have guests coming over for dinner the next evening.
Or that time when your husband comes home after you’ve spent the entire day cleaning the house, and 1. he doesn’t commend you for your efforts or even take notice, 2. he drops his drawers directly next to the empty laundry basket, and 3. rather than hang the wet towel up to dry on the hook approximately 2 feet away, he chooses to throw the soggy towel on the freshly-made bed instead.
And then there’s the time you decide to leave the dog home for a measly hour, because he couldn’t possibly destroy anything in an hour, right? Only you’re wrong…very, very wrong. Instead of being greeted at the door by your innocent, tail-wagging pup, you step through the door and find him sitting next to the area rug he decided to shred. Yeah, that.
Then there’s the multitude of other daily tasks that don’t usually cause complete and utter frustration, but because the day started off all kinds of wrong, those routine tasks cause you to slowly unhinge.
And that’s where this Blood Orange Coconut Mai Tai swoops in to save the day. A few sips, and you’ll forget all about your lousy day.
This fruity cocktail goes down smooth and steady. It’s easy sipping, for sure! It reminds me of fruit punch, only boozy and far more sophisticated.
I happened to have blood oranges handy when I made this cocktail, but you can always substitute fresh-squeezed orange juice if that’s what you have available.
This refreshing cocktail tastes like tropical paradise, and I’m sure we can all use a little of that right now. I don’t usually admit this, but I’m looking forward to the lazy days of summer.
Blood Orange Coconut Mai Tai
This Blood Orange Coconut Mai Tai is a sweet and refreshing tropical infusion of blood orange juice, pineapple juice, and a combination of coconut, pineapple, and dark rum.
Ingredients:
- 3 ounces blood orange juice
- 2 ounces pineapple juice
- 1 ounce coconut rum
- 1/2 ounce dark rum
- 1/4 ounce pineapple rum
- Splash of lemon-lime soda
- Maraschino cherry for garnish
- Orange wedge for garnish
Directions:
- Add the first four ingredients to a cocktail shaker full of ice. Give the mixture a few vigorous shakes.
- Transfer the mixture to a cocktail glass filled with ice. Top with a splash of lemon lime soda for fizz and garnish with a cherry and orange wedge.
