Warm Sweet Kale Salad with Poppyseed Dressing
This warm sweet kale salad with poppyseed dressing is crunchy, bright, and full of sweet cranberries and toasted pumpkin seeds.
I’ve been on a lunchtime salad kick lately.
Every time noon rolls around, I begin rummaging through my fridge for salad ingredients. I grab anything and everything that can be tossed with lettuce. I’ll admit, most days my salad is fairly boring and lackluster, a bed of greens topped with slices of cucumber. Can that even be considered a salad?
And then I discovered Eat Smart Gourmet Salad and Stir Fry Kits. Each bag is loaded with at least 5-7 different superfoods: kale, shaved brussels sprouts, green cabbage, broccoli, sliced carrots, chicory, seeds, nuts, and dried fruit.
It’s a meal in a bag, and a party in your mouth!
The bags live in your fridge until you’re ready eat. There’s no thought required. Grab a bag, toss the ingredients together, eat. It’s that simple.
I instantly fell in love with their Sweet Kale Salad Kit. It’s loaded with fresh kale, shaved brussels sprouts, broccoli, red chicory, and green cabbage. The kit comes with a package of toasted pumpkin seeds, dried cranberries, and a sweet and tangy poppyseed dressing.
Sure, I could have eaten the salad as is, but it’s cold outside, and I wanted to do something a bit unconventional, so I sautéed the greens with a little olive oil just until warmed through and slightly wilted.
After the greens get a spa treatment, I mix in the dried cranberries and toasted pumpkin seeds, and then I drizzle on the poppyseed dressing.
The salad is super crunchy, slightly sweet, and extremely addictive. I’ve since purchased several bags that I keep in the fridge for whenever the mood strikes. This salad is also great topped with roasted chicken or salmon.
Warm Sweet Kale Salad
Crunchy greens get sautéed until warm and tossed with sweet dried cranberries and toasted pumpkin seeds. The sweet, tangy poppyseed dressing will have you craving this salad day after day.

Directions:
Heat olive oil over medium heat in a large sauté pan.
Add the contents of the salad kit (minus the cranberries, pumpkin seeds, and dressing) to the sauté pan. Cook, stirring occasionally, for 5-6 minutes. The greens should be crisp and slightly warm.
Transfer the warmed greens to a large bowl. Toss with dried cranberries, toasted pumpkin seeds, and poppyseed dressing. Serve immediately.
