I’ve come to the conclusion that I need more sandwiches in my life. Besides the occasional burger, I very rarely indulge in a soft roll overflowing with tender meat. I used the help of Smithfield and their marinated pork tenderloin  to recreate my favorite meaty sammie, the Cuban.

A traditional Cuban sandwich is made with roasted pork, ham, Swiss cheese, pickles, and mustard. I ditched tradition and made my own variation, which I believe is better. I’ll leave that for you to decide.

My version of the Cuban goes like this: A soft sesame seed slider roll topped with thick slices of roasted pork that has been marinated to perfection, freshly grated Swiss cheese that melts when it hits the warm pork, bread and butter pickles, and a mustard-bourbon reduction.

Sounds better, right? That’s because it is, if I do say so myself.

I used Smithfield‘s slow-marinated Golden Rotisserie Flavor Pork Tenderloin for this recipe. It comes pre-marinated, so all you have to do is remove it from the package and roast it at 400 degrees F. for 30 minutes. No prep. No mess.

While the pork is in the oven, prepare your mustard bourbon glaze. If you’re a bourbon lover, you’re going to love this glaze. As the bourbon reduces, the flavor concentrates and creates a rich, bold glaze. The glaze is a combination of bourbon, spicy brown mustard, and brown sugar–that’s it. It’s sweet and slightly zippy.

Slice your pork tenderloin thick and add it to your slider rolls. Top with grated Swiss cheese and pickles. Give each sammie a generous drizzle of the glaze.

Cuban Sliders with Mustard-Bourbon Glaze

Thick slices of pork tenderloin piled high on a soft slider roll topped with melted Swiss cheese, sweet pickles, and a mustard-bourbon glaze.

Ingredients:

Sliders:

  • 1 (1.5 pound) Smithfield marinated pork tenderloin
  • 8 slider rolls (or 4 regular-size rolls)
  • 1/2 cup grated Swiss cheese
  • 16 bread and butter pickles
  • mustard-bourbon glaze (recipe below)

Mustard Bourbon Glaze:

  • 1/2 cup bourbon
  • 2 tablespoons spicy brown mustard
  • 1 tablespoon brown sugar

Directions:

Sliders:

  1. Preheat oven to 4oo degrees F. Line a baking sheet with parchment or aluminum foil.
  2. Place the pork tenderloin on the prepared baking sheet. Bake for 25-30 minutes, or until the internal temperature reaches 150 degrees F.
  3. Remove the tenderloin from the oven and allow it to rest for 5 minutes. Cut into 1/4-inch thick slices.
  4. Top each slider roll with 2-3 slices of pork, a generous pinch of swiss cheese, and two pickles. Drizzle each sandwich with mustard-bourbon glaze. Place the top bun on each slider. Serve.

Mustard-Bourbon Glaze: 

  1. Combine bourbon, mustard, and brown sugar in a saucepan; stir to combine.
  2. Bring the mixture to a boil over medium heat. Cook, stirring occasionally, until the mixture reduces by half, about 7-8 minutes.
