Now that the weather is warming up, I’m trading my bowl of warm oats for things like Strawberry Banana Overnight Oats, Honey-Lime Fruit and Yogurt Bowl, Honey Pecan Whipped Cream Cheese with Honeyed Fruit Salad, and this Pina Colada Yogurt and Honey Parfait.
I prefer to create recipes that can be made in advance and stored in the fridge for easy access. Otherwise, I tend to skip breakfast altogether and end up starving and famished by the end of the day.
While I spend the day working with food, I usually become too busy to eat, seamlessly moving from one task to the next. Before I know it, lunch has passed and it’s quitting time. Meanwhile, my stomach is angrily protesting.
That being said, breakfast is an absolute must, and in order to ensure I eat what is claimed to be the most important meal of the day, I prep the week’s selections in advance.
This Pina Colada Yogurt and Honey Parfait is easy to make and even easier to eat. It requires very little prep in the morning, which, as we know, is a must when you’re trying to get out of the house on time. It’s super healthy and can easily be made gluten-free with the addition of gluten-free old-fashioned oats.
Not only is this breakfast option delicious, it’s naturally sweetened. A drizzle of honey is all the sweetness this parfait needs. In this case, honey helps balance the tartness of the Greek yogurt, and it’s used to naturally sweeten the crunchy granola. The rich, golden sweetener helps the granola bake up crisp, crunchy, and perfectly golden brown.
A little prep work is required to make the assembly even easier during the busy work week, and that’s preparing the granola in advance. If you designate a small amount of time over the weekend to make the granola, the parfait only takes a few short minutes to prepare.
On the day you’re going to serve your parfait, assemble by layering the Greek yogurt, granola, and crushed pineapple. Top with a drizzle of honey and serve.
• 1 cup old-fashioned oats
• 1 cup sliced almonds
• 1 cup shredded coconut
• 2 tablespoons coconut oil, melted
• 5 tablespoons honey
• 1 teaspoon vanilla extract
• ½ cup Greek yogurt (your favorite flavor)
• ½ cup granola (recipe above)
• ¼ cup crushed pineapple, drained
• Drizzle of honey
