Surreal as it may seem, this pudding is for real. A blender and a few ingredients are all you’ll need to create a thick, chocolate-y pudding in under 2 minutes. My inner snacker is jumping for joy.

We all use coffee creamer for coffee, right? That’s the obvious choice. However, why not get a little unconventional and whip up something creative and unexpected? Enter, blender pudding. I used Coffee-mate‘s newest flavor, Extra Sweet & Creamy, to create a velvety smooth pudding right in the bowl of your blender. Coffee creamer isn’t just for coffee anymore.

Blender pudding is made by taking frozen bananas and whipping them in the blender with vanilla almond milk, liquid coffee creamer, peanut butter, vanilla extract, cocoa powder, and mini chocolate chips. The cocoa powder creates the rich chocolate base and the chips add bursts of crunchy chocolate flavor. The result is a super thick pudding ready to eat the minute you scoop it out of the blender.

I knew I wanted this pudding to be extra chocolate-y, so I added two types of chocolate: cocoa powder and mini chocolate chips. Combining the two creates a deeply rich chocolate flavor. Add a few dollops of peanut butter, and you have yourself a party. Coffee-mate’s Extra Sweet & Creamy liquid creamer is perfectly sweet and silky smooth. It’s the perfect addition to this easy pudding.

Chocolate Peanut Butter Banana Blender Pudding

Ingredients:

1/3 cup vanilla almond milk

2 tablespoons Coffee-mate Sweet Cream or Extra Sweet & Creamy liquid creamer

1 frozen banana (no substitutions)

1/2 teaspoon vanilla extract

2 heaping tablespoons peanut butter

2 tablespoons cocoa powder

1 tablespoon mini chocolate chips

 

Directions:

Place all of the ingredients in the bowl of a blender and pulse until smooth.

If you don’t have liquid coffee creamer on hand, feel free to use all almond milk.
