Have you noticed a trend around here lately? A muffin trend? I hope you’re not muffin-ed out just yet, because I have another delicious muffin recipe for you today.

Since today is National Blueberry Muffin Day, I’m celebrating with this recipe for blueberry lemon poppy seed muffins.

These super moist muffins are full of zesty lemon, sweet blueberries, and crunchy poppy seeds. They’re the perfect summer muffin.

Blueberry season is in full swing. I picked up 4 cartons of blueberries the other day at my local grocery store. At only 99 cents/carton, I couldn’t resist the urge to load up my cart.

Needless to say, I’ve been adding blueberries to just about everything. Since I’ve been on a huge muffin kick lately, it only made sense to fold them into muffin batter.

These muffins come together effortlessly in one bowl. There’s no need for a mixer; just a whisk and a rubber spatula.

The base of this muffin is made with tangy Greek yogurt and melted butter. The butter and Greek yogurt create a moist, tender crumb. I love the sour tang the Greek yogurt adds to this muffin.

I wanted the muffins to pack a strong lemon punch, so I used a combination of lemon juice and lemon zest. There’s no missing the lemon in these muffins.

Blueberry Lemon Poppy Seed Muffins

Juicy blueberries, zesty lemon, and crunchy poppy seeds come together to create a moist and delicious summer muffin.


Wet Ingredients:

1/2 cup granulated sugar

1/2 cup brown sugar

1 stick unsalted butter, melted and cooled

2 large eggs

2/3 cup Greek yogurt, plain or vanilla

zest and juice of one lemon

1 teaspoon vanilla extract

3 tablespoons poppy seeds

Dry Ingredients: 

2 1/4 cups all-purpose flour

2 teaspoons baking powder

1/2 teaspoon kosher salt

1 and 1/2 cups fresh blueberries


Preheat oven to 425 degrees F. Line or spray a 12-cup muffin tin.

In a large bowl, whisk together granulated sugar, brown sugar, and melted butter. Whisk in eggs, Greek yogurt, lemon juice and zest, vanilla extract, and poppy seeds until smooth and thoroughly combined.

Add dry ingredients directly to the bowl with the wet ingredients. Stir to combine. Fold in blueberries.

Fill each tin 2/3 full with batter. Place the pan in the oven and decrease the temperature to 375 degrees F. Bake for 20-23 minutes, or until a toothpick inserted in the center comes out mostly clean (a few moist crumbs are okay).

Allow the muffins to cool in the pan for 5 minutes. Transfer to a wire rack to cool completely. Serve warm or store the completely cooled muffins in an airtight container for up to 3 days.
