It’s hard to believe it’s November already. I puffy heart fall, and I’m happy it’s here, but once October comes to an end, it gives everyone Tom, Dick, and Harry the green light to bust out their deer antler car accessories–you know, the crap people attach to their SUV to make it look like Rudolph–and put on their ugly Christmas sweaters.

I’m just not ready.

What I am ready for, however, is Thanksgiving. All the food without the headache of having to track down a gift that Auntie Murielle doesn’t already own and that she won’t return to the store the day after Christmas.

Thanksgiving really is glorious.

As we all know, the best part about Thanksgiving is the abundance of leftovers–specifically turkey. Sure, you could eat it straight up on a slice of enriched (what does that even mean?) white bread that’s been slathered with cheap mayo, but why suffer? A few simple pantry ingredients and two slices of hearty Pepperidge Farm Harvest Blends bread, and you have yourself a pretty epic leftover Thanksgiving sandwich. Their new line of Harvest Blends bread not only tastes great with its soft, chewy texture, but it’s good for you too. I’m currently obsessed with their Seeded Grain bread variety. I love the contrast of soft, chewy, and crunchy.

With only a few simple ingredients, these Harvest Turkey Salad Sandwiches come together in a few short minutes. The savory turkey and sweet pops of dried fruit, crunchy apples, and toasted almonds make one heck of a delicious sandwich.

The addition of fresh chopped rosemary adds a seasonal burst flavor.

Tender turkey gets tossed with sweet dried cranberries, golden raisins, ripe apples, and toasted almonds. It’s absolutely delicious piled high and stuffed in between two slices of whole-grain bread.

Ingredients:

  • 4 heaping cups shredded turkey
  • 1/2 cup diced apple
  • 1/4 cup dried cranberries
  • 1/4 cup golden raisins
  • 1/3 cup diced celery
  • 1/3 cup toasted slivered almonds
  • 2 teaspoons freshly chopped rosemary
  • 1/2 cup good-quality mayonnaise
  • Salt and pepper
  • 4 pieces romaine lettuce
  • 8 slices Pepperidge Farm Harvest Blends bread

 

Directions:

  1. Add the first 7 ingredients to a large bowl. Gently fold in the mayonaisse and season with salt and pepper to taste.
  2. Assemble the sandwich by layering a few heaping spoonfuls of turkey salad on one slice of bread. Place a few pieces of romaine lettuce on top of the salad and top with the another slice of bread.
