This mango chia seed pudding is the result of a fierce craving for sunshine and warmth. For lazy days on the beach sipping a tropical drink. For flip-flops and sun-kissed skin.
Pipe dreams.

It’s all one big pipe dream. As I sit here and type this post and spoon creamy gobs of chia seed pudding topped with vibrant honeyed mangos in my face, the one fact remains: it’s -2 degrees outside and snowing.

Every time I FaceTime with my grandparents, my grandfather is in the background counting down the days until spring. I believe the number he rattled off this morning was 24. Being patient is something I’m no good att, which is why you won’t find too many intricate dessert recipes on this site. When I want something, I want it. As in immediately. As in instant gratification.
I’m a lot like my grandmother that way. The Dougherty side of the family is an impatient bunch.

Spring can not get here fast enough. I can’t wait for the day I can exit my front door and not have to worry about 1. the arctic air digging its razor-sharp icicle-like claws into my cheeks, 2. face planting down my front steps, and 3. wearing five layers of warmth. Nine times out of ten, I choose to stay home all because I’m too lazy to put on every single layer of clothes I own.
So I made mango chia seed pudding. Sweet, creamy pudding that also happens to be healthy. Eat it for breakfast or enjoy it as a snack. Either way, it’s a delicious treat.

Let’s talk about the mangoes. I’ve been absolutely obsessed with them lately. Every time I find myself at the grocery store, I add a few mangoes to the cart. What I have now is a bowl full of ripe mangoes that need to be used immediately before they rot. That’s what mango greed will get you, folks.

In a desperate attempt to use up all the mangoes before they went bad, I added mango puree to the pudding mix and made a sort of mango salad to spoon over the top of the chilled pudding. The mango salad is a mixture of mango chunks, honey, lime juice and zest. It’s vibrant, sweet, and slightly tart.
