I’m kind of into energy balls lately. I’ve been keeping a never ending supply of Cherry Pie Energy Balls and, my favorite (and yours), Peanut Butter Oat Balls in the refrigerator at all times. Any time I’m hungry, all I have to do is open the fridge and pluck a few from the container.
When I received a package of Sunsweet Prunes in the mail the other day, I knew exactly what I was going to make: chocolate chip energy balls.
I feel like the prune has a bad reputation, and I’m pretty sure it has everything to do with its name. The word “prune” isn’t the sexiest name. It’s a shame, really, because prunes are so good. They’re sweet, juicy–far juicier than any of the other dried fruit varieties–and rich in antioxidants and fiber.
I’m gonna say it, because I know you’re all thinking it: they’re nature’s natural laxative, and a pretty dang tasty one, if I do say so myself.
These chocolate chip energy balls are my take on a healthy chocolate chip cookie. You’ll only need 6 simple ingredients to make these healthy, pop-able treats. I used a mixture of old-fashioned oats, almond butter, prunes, honey, vanilla extract, and mini chocolate chips. The mixture comes together easily in the bowl of a food processor or high-powered blender.
You can easily turn these into a gluten-free treat by swapping regular oats for certified gluten-free oats. If you’re following a vegan diet, swap the honey for some maple syrup.
Each energy ball is packed with protein, fiber, calcium, iron, potassium, antioxidants, Vitamins A, K, and E. All of your health benefits rolled in to one tiny ball. You can feel good and stay healthy all year long!
