I love a well-crafted spritz cocktail. There’s something special about a bubbly cocktail. Even if you’re busting out the champagne for a Wednesday evening on the deck, it gives you that warm, fuzzy feeling. Because, why not celebrate you every chance you get?

It’s all about self love, friends! I think it’s safe to say that we can all use a bit more of it.

This Strawberry Campari Gin Spritz has quickly become my best friend. It’s a well-rounded cocktail, in that it offers a hint of sweet, a touch of bitter from the Campari, and that gorgeous fizz we all love from the champagne topper.

It’s a cocktail fit for a queen! Given that Sunday is Mother’s Day and all the mamas are queen for the day, it’s only fitting that she should be treated like royalty, and a bubbly beverage is definitely the way to rise to the occasion.

My mama and I spent last week sipping Prosecco poolside in Charleston, South Carolina. I’m not going lie, we went through our fair share of bubbly. Yes, we got a little tipsy, but it was all in fun and we had quite a few laughs during some much needed girl talk. Oh, the things you will say with bubbly on the brain.

This Strawberry Campari Gin Spritz combines homemade strawberry simple syrup with aromatic gin, bitter Campari, and a splash of orange juice. Right before serving, it gets topped off with a generous pour of champagne. It’s the perfect addition to Mother’s Day brunch.

Ingredients

Strawberry Simple Syrup

  • 1 cup chopped strawberries
  • ½ cup granulated sugar
  • Juice of 1 lemon
  • ½ cup water

Strawberry Campari Gin Spritz

  • 1 ounce gin
  • ½ ounce Campari
  • ½ ounce orange juice
  • ½ ounce strawberry simple syrup, recipe above
  • Splash of lemon juice
  • 5 dashes orange bitters
  • 2-3 ounces Prosecco
  • Garnish: strawberries, orange slices, orange peel
  •  

Instructions

  • To make the strawberry simple syrup, add all of the ingredients to a saucepan. Bring the mixture to a gentle boil over medium heat. Using a fork or potato masher, break up the strawberries to help infuse the simple syrup. Allow the mixture to gently bubble for 5 minutes. Remove the pan from the heat and allow the mixture to cool for 10 minutes. Strain the mixture. Store in the refrigerator in an airtight container for up to 1 month.
  • To make the cocktail, add the gin, Campari, orange juice, lemon juice, bitters,  and strawberry simple syrup to a cocktail shaker. Give the mixture several vigorous shakes. Strain into a highball glass filled with ice. Top with champagne and give the mixture a gentle stir to combine. Garnish with fresh strawberries and an orange peel.
