Rice Krispie Treats

  1. Line a 9-inch-by-9-inch square pan with foil and spray lightly with cooking spray.
  2. In a large pot over medium-low heat, melt butter. Once the butter is melted, add 8 cups of the mini marshmallows, red velvet flavor, and salt. Cook, stirring constantly, until the marshmallows are melted. Remove from the heat and stir in the rice cereal until coated. Fold in the remaining mini marshmallows.
  3. Transfer the mixture to the prepared baking pan. Gently press the mixture into the pan.
  4. Allow the treats to cool completely. Drizzle the treats with the cream cheese glaze. Sprinkle with colorful sprinkles and slice into squares. These treats are best served on the first day, but will stay fresh for up to 3 days in an airtight zip-closed bag.

Cream Cheese Glaze

  1. Add cream cheese to the bowl of a stand mixer fitted with the paddle attachment or in a large bowl using a hand mixer, beat until smooth and creamy. With the mixer on low, slowly drizzle in the milk and vanilla extract. If the mixture appears to thick, add milk 1 teaspoon at a time until the mixture is just thin enough to drizzle.
