I found shrimp on sale a few weeks ago and decided to stock the freezer. When shrimp goes on sale, you stock up. It’s one of my many grocery store rules. The same goes for butter, chocolate chips, and flour. Get while the gettin’ is good.

I bought something like 4 bags of shrimp. That’s a lot of shrimp, but it goes fast in our house. Needless to say, I’ve been whipping up recipes that incorporate shrimp.

Stir fry is a weeknight staple in our house. It requires very little effort–a little slicing and dicing–and comes together in under 30 minutes. My rule of thumb for making weeknight meals is it has to be fast and tasty. There’s no compromising; it must be both easy to make and absolutely delicious.

I used the help of McCormick‘s new Stir Fry Skillet Sauce to add flavor and cut down on prep/cook time. Their stir fry sauce is sweet, tangy, and full of bold Asian flavors.

The great thing about stir fry is it’s completely customizable. You can pick and choose your veggies and protein to fit your dietary needs, likes, and dislikes. I chose shrimp because it cooks up fast and is one of my favorite seafood options.

The only laborious part of this meal is slicing and dicing the veggies, which only takes about 5-8 minutes from start to finish. The rest of the dish comes together easily in the wok (or sauté pan).

By the way, I received a wok from my parents for Christmas. It has changed my life. I’ve had one on my wish list for ages but never took the time to pick one out for myself. So, thanks, mom!

If want to experience a life-altering moment in the kitchen, I highly recommend investing in a wok. It doesn’t even need to be an expensive wok. I do, however, recommend a nonstick wok. It makes cleanup easier.

It comes together fast–really fast. I’m going to advise that you to have all of your ingredients prepped and ready to go before you heat the wok. Chop your veggies. Peel your shrimp. Measure your spices. In a professional kitchen, this is called a mise en place. It means everything in its place. I call it being a responsible cook (which does not happen often in my kitchen) so I don’t burn the shrimp.

Lesson of the day: Prep your ingredients.

This stir fry comes together in under 30 minutes. That means you can still squeeze in some relaxation after cooking dinner. Hallelujah!

Total Time: 20 minutes

Prep Time: 5 minutes

Cook Time: 15 minutes

Ingredients:

  • 2 tablespoons canola oil, divided
  • 1 cup sweet peppers, chopped
  • 3 medium carrots, sliced
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes
  • 1 pound raw shrimp, peeled and deveined
  • 1 (9-ounce) packet McCormick Stir Fry Skillet Sauce
  • salt and pepper

 

Directions:

  1. Heat 1 tablespoon of oil in a large skillet or wok over medium heat.
  2. Add peppers, carrots, and onion to the pan. Cook, stirring occasionally, until tender, about 4 minutes. Add the garlic and red pepper flakes to the pan. Cook, stirring often, for an additional minute. Transfer the veggies to a bowl. Set aside.
  3. Add the reserved tablespoon of canola oil to the pan. Allow the oil to get hot and add the shrimp. Cook, stirring occasionally, until the shrimp is no longer translucent, about 5 minutes.
  4. Add the veggies back to the pan with the shrimp and stir to combine. Turn the heat down to medium-low and add the stir fry sauce. Continue to cook until the sauce is bubbly, about 2 minutes. Add salt and pepper to taste.
  5. Serve over rice.
